Begin your day at 8:15 AM with a refreshing drink at Hai Scout Café, located at 98 Nguyen Thai Hoc Street in Hoi An Ancient Town, where we gather for our culinary adventure. The first stop is Hoi An’s vibrant market, a sensory feast filled with colorful stalls, enticing aromas, and lively sounds. Here, you will have the opportunity to interact with local sellers and select fresh ingredients that will be used in your cooking lesson later.

Next, we embark on a leisurely 25-minute cruise aboard the Red Bridge boat along the picturesque Hoi An River. This serene journey offers a glimpse into the daily lives of the local river communities, so be sure to have your camera ready to capture the enchanting scenery.

Upon arrival at the Red Bridge Cooking School, you will explore the lush herb and vegetable garden before diving into the world of Vietnamese cuisine. The cooking lesson lasts approximately two hours, during which the talented chefs will first demonstrate each dish before you have the chance to prepare it yourself. You will also receive a brief introduction to the art of Vietnamese food carving, enhancing your presentation skills.

After the lesson, it’s time to savor the fruits of your labor as you sit down to enjoy the delicious dishes you have created. The menu includes fresh rice paper, shrimp rice paper rolls, crispy Hoi An pancakes filled with shrimp and herbs, seafood salad served in a half pineapple, and Vietnamese eggplant in a clay pot. Additionally, you will learn to craft decorative elements like a tomato rose and a cucumber hand fan. Lunch also features steamed ocean fish served on a bed of freshly chopped vegetables, which is not included in the demonstration. A vegetarian option is available upon request.

The experience concludes around 1 PM, after which you will be transferred back to central Hoi An, filled with delightful memories and new culinary skills.
